Pinot Noir dominates the house style, accounting for over 60% of its estate vineyards, particularly in the Montagne de Reims. The focus on Ay-Champagne is deliberate. This is one of the most iconic Pinot Noir crus in Champagne, known for producing wines with intensity, depth and a naturally generous structure. In PN AYC21, Ay forms the backbone of the blend, giving the Champagne its signature richness and presence.

To balance this intensity, Bollinger incorporates fruit from Tauxieres and Mutigny, two villages that introduce freshness, lift and aromatic precision. This creates a tension between power and elegance that defines the cuvee.

The 2021 base year adds a further layer of character, bringing brightness, clarity and a refined acidity that supports the wine’s natural structure.
