The Third Chapter Of The Macallan's TIME:SPACE Collection

The Third Chapter Of The Macallan's TIME:SPACE Collection

Some releases add a new bottle to the shelf. Others mark a turning point. The Macallan TIME:SPACE Sherry Cask belongs firmly in the second camp: it is the distillery's first whisky shaped by casks that held sherry from Valdespino, the Jerez bodega now under Macallan's own roof.

For a house whose reputation was built on sherry oak, that is more than a footnote. It is the moment Speyside and Andalusia stop being trading partners and start sharing a family name.

Macallan itself frames the release as a kind of time capsule, holding something of both Jerez de la Frontera and its own estate in Speyside.

From Jerez, With Intent

Jerez de la Frontera is where sherry was born, and Valdespino is one of its most storied names. When The Macallan took ownership of the bodega, it gained something rare: control over the very wine used to season its casks.

That matters because a sherry cask is only as good as what soaked into its staves. By using its own Valdespino sherry, Macallan can shape the influence on its whisky right at the source. This bottling is the first proof of what that partnership can produce, and a clear signal of where the distillery's cask programme is heading.

The casks behind this release have a story of their own. They were built in Macallan's own cooperages, filled with sherry at the Valdespino bodega, and then shipped to Scotland in 2024 as part of the distillery's 200th anniversary. They were the very first 200 casks seasoned this way, and a selection of them was chosen to finish this whisky.

It is a meeting of two crafts: generations of sherry-making know-how in Jerez, and the Whisky Mastery Team working on the estate in Speyside.

Two Encounters With Sherry Oak

What sets this whisky apart is that it meets freshly seasoned sherry wood twice, not once. Macallan describes this as a second chapter of sherry influence: the whisky moves from maturing in sherry oak to being married in it.

  1. The long sleep. The spirit spends its maturation mostly in European oak casks seasoned with sherry, joined by a small share of American oak.
  2. The marriage. Once mature, the components are brought together in a selection of those first 200 Valdespino-seasoned casks. This finishing stage lays a second coat of sherry character over the first.

Think of it as a painter adding a final glaze: the picture is already complete, but the last layer deepens every colour beneath it.

Two Decades In The Making

Every drop in the bottle has rested for at least 20 years. That kind of patience is what allows the spirit to absorb so much from the wood without losing its own voice.

The result is a single malt with real depth and layering, the sort of whisky that rewards a slow pour and a second look.

In The Glass

  • Colour. A deep, reddish mahogany that hints at the sherry wood before you even lift the glass, and it is all natural, with no colour added.
  • Nose. Fruit steeped in sherry comes first and comes strong: plump raisins, figs and Medjool dates. Then a sweeter, bakery side appears, with almond frangipane, honeycomb toffee and toasted, caramelised nuts. Underneath sits something like a box of dark chocolates, lifted by cinnamon, ginger and a touch of star anise.
  • Palate. Think of a well-stocked baker's pantry: sultanas, dates and dried apricot, folded into sticky ginger cake and dark treacle toffee. Blackberry jam and chocolate-dipped cherries add a darker fruit layer. That richness is kept in check by clove and cinnamon warmth, before the flavour drifts towards cocoa nibs and the smooth note of polished wood.
  • Finish. Lingering and warm. Soft wood spice and a trace of espresso fade out slowly, with oak returning in gentle waves.

Chapter Three Of A Bigger Story

The TIME:SPACE collection began as part of The Macallan's 200th anniversary, with the original TIME:SPACE release followed by TIME:SPACE Mastery. Sherry Cask is the third instalment, and it shifts the focus from looking back over two centuries to looking ahead with Valdespino.

The bottle carries the theme too. Its striking ring shape, with an open circle at the centre, frames whatever sits behind it, while a golden-yellow inner band and matching cap give this edition its own identity. It is a bottle designed to be displayed as much as poured.

The circle is no accident. It stands for time moving without a beginning or an end, much like the whisky's own long journey, brought full circle by the people who looked after it.

The presentation box takes its cue from the palomino grape, the variety behind the Valdespino sherry used to season the casks. Its round interior echoes the shape of the fruit, and its warm yellow is meant to recall Andalusian sunshine falling across ripening vines.

The launch imagery goes further still. Called the Circle of Light, it imagines a fantasy world where Scotland, Spain and the USA share one round landscape, tracing the path from grape to seasoned cask to finished single malt. Watching over it all is Caskera, a guardian figure who personifies Macallan's craft.

The Final Pour

TIME:SPACE Sherry Cask is a statement of intent. It shows what happens when a distillery famed for sherry oak finally controls the sherry itself, and it hints at a future where that connection runs even deeper.

For collectors, it is a landmark first. For drinkers, it is a rich, generous 20-year-old built for slow evenings. Either way, it deserves to be savoured, and enjoyed responsibly.
