After fermentation, the Henri Giraud Hommage Au Pinot Noir Champagne spends 12 months resting on the gross lees in barrel, and a further 6 months on the fine lees. This is followed by 36 months ageing in bottle. The result is a rich, saline style of champagne, very much the signature of Henri Giraud.
Henri Giraud passionately adhere to the notion of terroir. Producing champagnes that are a true expression of the grape varieties and where they are from. With zero compromise on quality.
They make champagne using natural methods, including fermentation in old oak, and minimal sulphur additions. Robert Parker famously describes them as the finest champagne house virtually no one has ever heard of.
