This Bollinger 2018 vintage Champagne blend is 66% Pinot Noir and 34% Chardonnay, drawn from 19 Crus - Pinot Noir predominantly from Verzenay, Ay and Mareuil sur Ay, and Chardonnay from Chouilly and Cuis.
Ageing takes place in the cellar under natural cork for twice as long as stipulated by the rules of the Appellation, and each bottle is riddled and disgorged by hand. The dosage is moderate at 6 grams per litre.
- The nose opens with fresh citrus and Granny Smith apple aromas, evolving into orchard fruit notes of white peach, apricot and Mirabelle plum.
- With time in the glass, further complexity develops with fresh almonds, breadcrumbs and acacia alongside subtle floral notes of white peony and a mineral citrus backbone.
- On the palate the wine is structured and balanced, revealing flavours of fruit compote and quince. The texture gradually unfolds into a creamy effervescence with impressive depth and length.
