Producing this wine from 100% pinot gris, also known locally as Fromenteau. These grapes are a part of the estate's 'forgotten garden' of varieties. Growing alongside petit meslier, arbane and blanc vrai.
- The 2021 edition takes 50% of its grapes from the 2017 harvest and the other half from 2018
- Bottling the wine after natural malolactic fermentation with no clarification or filtering
