Oliver's Cider & Perry

Oliver's Cider & Perry are a world-class producer based in Ocle Pychard in the heart of Herefordshire. They make balanced, characterful ciders and perries that are both complex and accessible.

With the arrival of mechanisation leaving less pickers in need of refreshment, Tom Oliver's grandfather decided to stop making cider on the farm. He sold or gave away all the equipment, and left the old stone mill to decay. But a young Tom re-ignited the family's cidermaking heritage and started again from scratch. Fast forward forty years and he is now a legend in the world of quality, artisanal cider and perry.

Oliver's approach is to take what the fruit gives and intervene as little as possible. They use wild, native yeasts for fermentation and only add a very small amount of sulphites when bottling.
