Apostolos Thymiopoulos is a leading figure in modern Greek winemaking, based in Naoussa, Macedonia. The Thymiopoulos family has cultivated vineyards for generations, but it was Apostolos who began bottling wines under the family name after studying oenology.
He is known for his low-intervention approach and commitment to organic and biodynamic viticulture, producing wines that express purity, terroir and finesse. This Xinomavro is fermented in stainless steel and aged in concrete tanks for eight months, with no oak used.
