ched vineyards of Salento in Puglia, this organic red wine is made from hand-harvested Primitivo grapes. Paolo Leo, a family-run estate with roots dating back to the early 20th century, applies the traditional appassimento method by twisting the stems of grape bunches to dry them naturally on the vine. This concentrates flavour and structure while preserving freshness.
Followed by ageing in American oak for five months and stainless steel for six. The wine is certified organic, vegan, and vegetarian, and showcases the estate’s commitment to indigenous varietals and sustainable practices.
