Made by combining twice-distilled cider spirit with freshly pressed, unfermented apple juice, it captures the full character of the apple while preventing the juice from fermenting. The blend is then aged for 21 months in third-fill ex-wine casks, allowing the young spirit, fruit and wood to develop together.
