Maison Jaffelin, established in 1816, is one of the smallest yet most historic producers in the region, vinifying in the heart of Beaune. Their production combines precision and tradition, using a vertical wine press and ageing in the twelfth-century cellars of the Chapter of Our Lady. Grapes are sourced from both small villages and renowned appellations including Rully, Santenay, Monthelie, and Nuits-Saint-Georges. This Blanc de Blancs undergoes extended lees ageing for added texture and aromatic complexity. Fine bubbles, gentle structure and purity of fruit are hallmarks of this elegant and precise crémant.
