Domaine Cailbourdin Les Racines Pouilly-Fume
Domaine Cailbourdin was started by Alain and Carmen Cailbourdin in 1980. Over the years they have cemented their reputation as one of the finest growers in the Pouilly-Fume appellation, with 16 hectares split between the different crus, each of which is vinified separately. They practise both organic and biodynamic viticulture.
Les Racines is produced from vines grown on a mix of quartz sand and limestone. This is a particularly expressive cuvee with a grapefruit, passionfruit and mandarin fruit profile, and subtle acacia florals.
Works well as an aperitif, or paired with fish, snails, cold cuts or salads.
