Bivrost Arctic Barley Whisky 50cl

Bivrost Arctic Barley Whisky

STRICTLY ONE BOTTLE PER PERSON ONLY

Made from barley grown in Northern Norway, this limited Bivrost release explores how Arctic conditions can influence the character of whisky. The 2019 harvest was grown at Heimdal Farm in Alta, where long summer daylight, cool nights, mineral-rich soils and a short growing season create very different conditions from traditional barley-growing regions. After distillation, the spirit matured for five years in a second-fill Oloroso sherry cask before being bottled at a powerful 57.7% ABV cask strength.

Only 292 bottles have been released from the 2019 harvest, making this a particularly distinctive expression of Aurora Spirit Distillery's ongoing Arctic Barley project. The whisky represents years of collaboration between farmers, researchers, maltsters and distillers, investigating the relationship between barley, climate and whisky production.

• Deep golden amber, reflecting five years of maturation in Oloroso sherry oak.
• Rich dried fruit and sherry aromas combine with warming spice, toasted oak and the distinctive depth of a cask-strength whisky.
• Full-bodied and powerful, with concentrated sherry character, dark fruit, oak and warming spice developing across the palate.
• Long and warming, with lingering dried fruit, oak and spice carried by the whisky's substantial cask strength.

Its rich sherry character suits dark chocolate, mature cheese, roasted meats and desserts featuring dried fruit or warming spice.
