This rich and expressive red wine is crafted in the rugged foothills of the Pyrenees by Master of Wine Liam Steevenson in collaboration with the Bousquet family. The vines—some over 100 years old—are planted across schist and granite soils in the Cotes du Roussillon Villages. The wine is named after the Immortelle flower, symbolising longevity and resilience.
Hand-harvested grapes are fermented in open barrels using traditional punch-down techniques. The wine is aged for 18 months in 500L French demi-muids, adding depth and structure while preserving fruit purity.
