Evolution 1276 Chardonnay
This 1276 wine pays tribute to one of Herefordshire’s earliest records of viticulture. In 1276, the Bishop of Hereford documented the planting of vines on the south-facing slopes of Ledbury in his Red Book. Today, those same slopes, with their unique microclimate and ancient soils, have been replanted and lovingly nurtured once again.
This barrel-aged, single-vineyard Chardonnay is fermented and matured for eight months in 3-year-old French oak barriques.
- Evolution 1276 Chardonnay has aromas of preserved lemon, baked Bramley apple, hazelnut and minerality.
- On the palate enjoy bright acidity and a rounded, silky texture reveal juicy citrus, orchard fruit, toasted vanilla spice and a honeyed nuttiness.
- Leading to a layered, textural length and a clean mineral finish.
Pairs beautifully with shellfish, grilled or poached poultry, and dishes with cream-based sauces or fragrant herbs.
