Domaine Du Pelican Arbois Savagnin Ouille

This is a biodynamic white wine from Jura, made from the region’s signature grape, Savagnin. Domaine du Pelican is based in Montigny-les-Arsures, near Arbois, and was founded by Guillaume d’Angerville of Volnay. The estate has quickly earned a reputation for its precise biodynamic farming, drawing on Burgundy expertise and Jura’s unique terroir.

The wine is fermented in large barrels and aged in a mix of oak and stainless steel. No new oak is used, allowing the fruit to shine. Savagnin 'Ouillé' is the 'topped-up' style, whereby casks are regularly filled to prevent flor yeast growing, as in Vin Jaune. The result is an extremely aromatic and fresh white wine.
