This single-varietal cider is made exclusively from Major apples grown on the Ross-on-Wye farm in Herefordshire. Mature orchards planted nearly forty years ago provide fruit with natural tannin, structure and depth, expressing the character of traditional bittersweet cider apples.

The cider is produced using pure juice and natural fermentation, allowing the fruit and orchard terroir to guide the final style. Minimal intervention in the cellar preserves authenticity, balance and the distinctive texture of the Major apple.

• The nose shows ripe orchard fruit, baked apple and subtle floral notes with gentle earthy depth.
• The palate is full-bodied and structured, combining bittersweet apple, soft tannin and natural orchard richness.
• The finish is dry, gently sparkling and persistent, with lingering tannic grip and fresh apple character.
