E.H. Taylor Small Batch Bourbon

Buffalo Trace Distillery in Frankfort, Kentucky produces this bottled in bond bourbon, named for Colonel Edmund Haynes Taylor, Jr. Taylor was a key figure in 19th century American whiskey and helped push through the Bottled-in-Bond Act.

The whiskey uses Mash Bill #1, a low rye recipe, and matures in the century-old warehouses Taylor built. Thick stone walls hold steady temperatures there, allowing slow and even ageing across the seasons. Barrels are hand-selected, batched in small numbers and bottled at 100 proof.

• Warm caramel corn on the nose, with butterscotch, vanilla and a hint of dried orange peel.
• The palate brings butterscotch, liquorice and gentle baking spice.
• Soft in the mouth, the finish turns to black pepper, tobacco leaf and lingering oak.

Best served neat or over one large ice cube, with a splash of water to open it up. Pair with smoked brisket, mature cheddar or a slice of dark chocolate and pecan tart.
