This Highland single malt comes from a distillery built beside the River Tay in Perthshire in 1898. Water is drawn from the nearby Pitilie Burn, long known locally for trace gold deposits. Longer fermentation times here produce a softer, fruitier new make spirit.
Whisky is matured first in first-fill, refill and re-charred bourbon casks. It is then finished for six months in first-fill oloroso sherry casks. This extra ageing brings depth, warmth and a fuller body to the spirit. The distillery now runs on renewable energy, reflecting a long-term approach to production.
- The nose opens with honeyed citrus and a warm hit of spicy clove.
- The palate is full bodied, showing rich fruitcake, dark chocolate and gentle warmth.
- Finishes smooth and satisfying, with the flavours lingering long after each sip.
