Hand‑crafted in the rugged Roussillon region of Southern France this Syrah from Cotes Catalanes honours ancient winemaking traditions. The project was led by Master of Wine Liam Steevenson and oenologist Pierrick Harang, working alongside the seventh‑generation Bousquet vineyard owners. The wine is produced using only ancient techniques in magnum format to preserve depth and potential.
- Immortelle Le Casot opens with intense perfumed aromas of fleshy dark fruit, blackberry, violet and liquorice that draw you in.
- The palate shows textured tannins that caress rather than dominate, with palate‑enlivening acidity balancing the generosity of fruit.
