Remarkably, five million years ago, the region of Jerez, the birthplace of this exceptional sherry, was submerged underwater.

This unique historical backdrop explains the soil's exceptional richness in diatom fossils, these hidden microscopic marvels essential for the thriving of vines in the region's hot climate, characterised by dry summers and sporadic heavy rainfall.
