Dr Beaky's Gin
Hay Distillery, located in Hay-on-Wye, Wales, was founded by husband and wife Jonny and Natalie. In 2018, they converted an outbuilding into a micro-distillery and began crafting their first gin, Wild Knapp Gin, using local fruits and herbs. Dr Beaky's Gin followed, both winning Gold Awards at international competitions. Made using the botanicals said to be found in the 17th century plague doctors masks.
- Dr Beaky’s Gin has herby citrus tones from homegrown lemon balm and mint, floral notes from rose, carnation petals and lavender and warm spice from cloves, peppers and juniper
- Each bottle is then gently filled with aromatic juniper wood smoke to create very light smoky finish
Classic, light tonic or elderflower tonic can enhance the floral notes in this London Dry Gin. Pair it with a mild, creamy cheese like goat cheese or a tangy blue cheese works well. You can also go for light charcuterie like prosciutto or smoked salmon.
