Evolution 1276 Bacchus
A winery steeped in History dating back to 1276 when the Bishop of Hereford recorded planting of vines on south-facing slopes in Ledbury in his ‘Red Book’. Led by head winemaker Laurence Cocking the vines have now been reintroduced on those same slopes.
Inspired by the aromatic white wines of Alsace and Saint-Bris. It is crafted in a full and rounded style while preserving the fresh fruit and perfumed character of the Bacchus grape variety.
- The nose lifts with poached pear, sweet lime, and elderflower cordial.
- On the palate it turns properly satisfying: luscious texture balanced by fresh acidity, with flavours of gooseberry fool and nectarine.
- A clean, herbaceous finish of nettle and mint.
The style is dry and unoaked designed to be drank young. Pair alongside seafood and citrus lead pastas.
