The great champagnes bearing the Carbon name owe their excellence to the exceptional quality of their grapes. Grandson of the 5th generation of Champagne winemakers of the Champagne house Devavry, Alexandre decided to create his own Champagne House. After more than 4 years of research and development to create the most perfect bottle, Champagne Carbon is launched with the oldest vintages of his grandfather.
Champagne Carbon Brut is a blend of 50% Chardonnay, 25% Pinot Noir and 25% Pinot Meunier. It is fermented in oak with no malolactic fermentation.
This is a particularly bright, linear style of Champagne with crystalline purity. There's beautiful citrus and crunchy green apple fruit here, accompanied by oyster shells, white flowers, anise, and light toast and pastry notes.
The perfect accompaniment to smoked salmon with tarragon, or cod in a beurre blanc sauce with fresh chives.
