The estate sits in Ollauri, operating one of the most sustainable, eco-friendly wineries in all of Europe. Grapes harvested from chalky clay soils undergo careful temperature-controlled fermentation in stainless steel to retain pure fruit personality. The wine then matures for eighteen months in mixed French and American oak barrels before long bottle ageing.
