Wiston Estate has been in the hands of the Goring family since 1743. Pip Goring had the vision to start planting vines on the estate. Recognising that they had similar soils and climate to Champagne. Planting a 16 hectare vineyard in 2006. Now run by her son, Richard, and his wife, Kirsty, with the help of award-winning winemaker Dermot Sugrue.
The vineyards are a south-facing chalk escarpment planted with chardonnay, pinot noir and pinot meunier. The natural sun-trap, protected from winds, allows the grapes to fully ripen in this cool climate. Providing the Goring's with fruit that has potential for some of the best sparkling wines in the country.
The estate is managed with sustainability at the core; the winery relies on solar panels for energy, and the vineyard team use a Boisselet cultivator to manage root and weed growth, limiting any need for chemical herbicides and synthetic fertilisers. Wiston Estate is an accredited member of Sustainable Wine GB.
- Harvesting the grapes in late autumn. Pressing different varieties gently with a Coquard press. Fermentation is in stainless steel before malolactic fermentation. The wine undergoes secondary fermentation in the bottle, on the lees, for three and a half years. Riddling and disgorging with a dosage of 8 g/L
- A fresh, vibrant style of English sparkling wine leading with crunchy green apple fruit, freshly cut lemons, and gentle creamy and biscuity flavours
- Aromas from the time spent on the lees. The wine has a fine mousse, with more complex notes of apple compote, candied citrus peel and toast emerging as it spends time in the glass
