This relative newcomer has rapidly established itself among the firmament of English sparkling wine. Founder Jacob Leadley and fellow winemaker Zoe Driver are overseeing the creation of a new winery in the heart of Hampshire Test Valley. Chalky by name and nature, this is an absolutely stunning English sparkling wine, with so much depth and length.
Black Chalk Classic is made with minimal intervention. 60% Chardonnay, 30% Pinot Meunier and 10% Pinot Noir. Whole bunch pressing, cold settling, primary fermentation in both stainless steel and oak, and 80% malolactic fermentation. Tirage in early spring and secondary fermentation in bottle. The wine spends at least 20 months on the lees. Post-disgorgement, the wine is held for 6 months on cork before release.
