Jayson Pahlmeyer understood that making wines with exceptional concentration, complexity, and ageability required venturing to extremes. That is what drew him to the rugged parcel of vines on the ridgeline of Atlas Peak that would become his iconic estate vineyard. His vineyards, standing at over 1,4000 feet above sea level, benefit from three more sunlight hours per day compared to the valley floor, yet cooler temperatures. This helps grapes to ripen slowly and results in wines with both intensity and elegance.

Jayson Sauvignon Blanc is 100% barrel-fermented, then aged on its lees in neutral oak barrels for six months.

In the words of winemaker Katie Vogt, the wine has fresh flavors and lively acidity counterpoised with a deep, textural richness. Vibrant aromas of orange blossom, Kefir lime leaf, and ripe guava leap from the glass. The palate opens with a focused surge of Key lime, guava, and a hint of river rock minerality. Bright, concentrated citrus and tropical fruit flavors glide through the supple, layered mid-palate, continuing laser sharp through the crisp finish, an echo of citrus meringue ringing on.
