Pattini Chianti
Pattini Chianti is a blend of 90% sangiovese and 10% canaiolo. Fermentation is over 10 to 15 days in stainless steel tanks. Pumping the must over twice a day. Finishing fermentation in cement tanks to soften and round out the wine. This allows for a better integration of tannins and acidity and more harmonised aromas.
