He seeks out interesting plots of vines and growers who prioritise ecologically responsible farming and keeps winemaking simple, without fancy designer yeasts or new oak in his downtown cellar in the historic city of Carcassonne.

This zero-dosage Cremant de Limoux, made by a former Champagne producer, gives you so much more for your money than a Champagne at the same price. It has all the sensory indulgence and bready, yeasty characters of a good Champagne, with very moreish apricot, melon, apple compote and preserved lemon fruit characters. The finish is both vibrant and biscuity, and makes it very hard to stop at just one glass.
