San Giusto A Rentennano Vin San Giusto 2014

This sweet dessert wine is from 90% malvasia and 10% trebbiano grapes. Picking is by hand when perfectly mature. Following with drying on racks in a well ventilated room for approximately 140 days.

Serve San Giusto A Rentennano Vin San Giusto 2014 between 7 to 8 degrees celsius.

Pair with a combination with Taleggio type or herbs enriched cheeses, liver pates, or bitter chocolate. 

After pressing the grapes, the must is put in secure small chestnut barrels, each containing 40 to 180 litres. Storing in lofts where they are subject to seasonal temperature change. Here the wine ferments and develops slowly over a six year period, during which time 40% evaporates, which accounts for its extraordinary concentration.

Before bottling, the wine goes through filtration, drop by drop, through Holland cloth. Vin San Giusto has long ageing potential. Bottling takes place then into storage for a further 18 months, before it goes on the market.

Spring and summer were rather rainy and ripening therefore on average late. Painstaking care during the seasonal development stages, coupled to successive thinning-out turns, allowed for a good quality of the malvasia and trebbiano grapes. Smallish in quantity, the wine nevertheless shows features comparable to those of the best preceding vintages and is apt to a very long ageing period indeed.
