Stephan von Neipperg took over the reins of this estate in 1985 and has since transformed it from a very ordinary one to one which produces some of the very best wines in Saint-Emilion, earning a promotion to Premier Grand Cru Classe in 2012.
The mix of clay-limestone and clay-sand soil at Chateau Canon-la-Gaffeliere makes it very efficient at retaining heat. As a result, they can more easily ripen Cabernet compared to neighbouring estates, so they plant an unusually high proportion for the appellation.
Harvest for the 2009 Chateau Canon-la-Gaffeliere took place in the first 10 days of October, with a yield of 34hl/ha. The blend for this particular vintage was 55% Merlot, 35% Cabernet Franc, and 10% Cabernet Sauvignon. Initial fermentation was carried out over 35 days in wooden vats, with pigeage employed throughout. The wine was left to mature on the lees in 90% new oak barrels for 17 months. No fining or filtration was carried out.
