Herrings are plentiful in the shared ocean between Scotland and Islay only becoming ‘kippers’ when they are cured in salt and cold smoked.
With its notes of zesty lemon and a sweet honey edge with underlying lslay peat, Bowmore pairs perfectly with some of these key ingredients.

Bowmore cured wild salmon, pickled fennel, quail eggs, parsley caper dressing
Main:
Earl grey tea smoked Scottish venison loin, smoked pancetta puy lentils, buttered kale, white plum and Bowmore infused pan juices

50ml Bowmore 12 Year Old Single Malt Whisky
1Bar spoon sugar
½ Lime cut into segments
8-10 Mint leaves
Chilled soda water to top up
Method:
Muddle lime segments and sugar together in glass, add mint and GENTLY crush.
Fill glass with crushed ice, add Bowmore and gently churn with bar spoon. Top with soda water and garnish with a mint sprig.
