The inaugural release in Waterford Distillery’s Arcadian Series and the first-ever organic-certified Irish Single Malt Whisky.
Waterford’s Arcadian Series is a celebration of the radical barley growers and maverick farming philosophies that put flavour above crop yield. Crafted using organic malted barley sourced from six Irish farms, run by Paddy Tobin, Alan Jackson, Pat and Denis Booth, Jason Stanley, Trevor Harris and John Mallick. Distilled in 2016, Gaia 1.1 has been matured for three years and nine months in a combination of first-fill American oak, virgin American oak, French oak and Vin Doux Naturel (sweet wine) casks. What emerged from those precious barrels was named after the ancestral mother of all life in Greek mythology, Gaia. Rather fitting for an eco-friendly malt that’s going back to its origins.
Pouring this innovative, limited-edition whisky is like drizzling honey into a glass, golden and viscous. Aromas of orange peel, dried figs, granola and salted caramel and sweet spices.
