The fruity notes of the Tenuta Scuotto Greco Di Tufo 2021 offers a versatile canvas for pairing. The fruity aromas and spicy undertones harmonise beautifully with the sweetness of seared scallops. A mango salsa adds a refreshing and tangy element. For a cheese pairing, an aged Gouda with its nutty and caramelised flavours would complement the wine's complexity and persistence.
The 2021 vintage was a warm one and scarce rainfall distributed sporadically throughout the year, but concentrated almost entirely in autumn. The weather from middle of September was excellent, after rains infact, the grapes were able to ripen perfectly and express themselves at their best thanks mild weather. The harvest took place during the third week of October, and the grapes showed an excellent acidity and much aromatic character.
