This Red Wine has a bright ruby colour and delicate yet pronounced red berry and floral aromas. On the palate the wine is tender and graceful with prominent wild blackberry flavours and notes of truffle and game which develop as the wine matures.
The Wine drinks beautifully now and will keep developing for the next 3 years.
Maison Joseph Drouhin is a family domaine, founded in Beaune in 1880 and now into its fourth generation. The domaine employs a rigorous attention to detail, self-imposed discipline, a desire to learn, and a never ending search for quality.
Today Drouhin own 73 hectares (182.5 acres) of vineyards in Cote de Nuits, Cote de Beaune, Cote Chalonnaise and Chablis. More than two thirds of their vineyards are classified as Premier and Grand Crus.
Chorey-les-Beaune is a small appellation around the tiny village of Chorey just outside Beaune. Cultivation is biodynamic and the grapes supplied for this wine come partly from Drouhin's own vineyards but also from partner growers.
All harvesting is done by hand and the must undergoes a gentle fermentation with minimal intervention using indigenous yeasts. The resulting wine is then matured in barriques (10% new) for 12-15 months and the final blend is lightly fined before bottling.
