Delamain Vesper Grande Champagne Cognac
At an age of 35 years, it is older than the Delamain entry level Pale & Dry X.O., and has been crafted in a different, more classic style. Deeper in colour with a more pronounced amber hue that is tinged with bright flashes of gold. The bouquet is initially oaky, but gives way to aromas of mushrooms, dry vine shoots and vanilla. On the palate, the Vesper is full-bodied with an exceptional roundness and remarkable length, with a smooth finish. This is a very full, mature, yet refined Cognac; one for the connoisseur! Serve Vesper with a variety of sweet and savoury dishes, from foie gras to cheese to your favourite chocolate dessert.
Delamain Pale & Dry XO Cognac
100% Grande Champagne.A blend of various old Grande Champagne cognacs. Each cognac is aged separately during many long years owing to their origin and then the blend itself, made at the end of the ageing period, is aged for two years more (marriage).Matured in well seasoned Limousin oak casks (350L) and cellared in old cellars near the river, more humid than dry.The blend at natural strength (around 50% vol.) is very slowly broken down at 40% with weak old Grande Champagne at 15% which enriches the blend.A style of delicacy, length, fruitiness and mellowness, a bouquet of power of the perfumes and a length of the fragrance. Floral scents, lingering aftertaste of vanilla (rancio).Mellowness, roundness, age. Intense fruitiness.A colour of extremely clear and bright, brilliant and velvety gold."Spirits Business Master 2010 "Pale & Dry, "Pale" because it is much paler than other cognacs of this age due to the natural pale colour of the cognacs used in the blend which are all matured in old casks and "Dry" because it has only its natural sweetness."Delamain is one of the last family-owned Cognac houses. This is a beautiful old Cognac made using the best eau-de-vie from the Grande Champagne region - powerful, mellow and subtle, all at the same time. A heroic after-dinner treat." Matthew Jukes Daily Mail 14 June 2008.
Delamain Extra de Grande Champagne
Older than Pale & Dry XO and Vesper, the Extra de Grande Champagne shows deep maturity and a full-bodied bouquet. It is the perfect expression of an old Cognac from Grande Champagne.
Brilliant amber-topaz with a wonderful soft golden clarity, on the nose a powerful perfume and great length of the fragrance. The palate is full, deeply mature and with a mellow yet intense and complex fruitiness.
The Extra de Grande Champagne is an original decanter, designed and blown for Delamain. The shield on the decanter, comes from an original plate made by Henry Delamain in 1762 at his delftware factory in Dublin for the wedding of his nephew James Delamain to Marie Ranson.
