Chateau Mercian Koshu Gris de Gris, Japan
An exceptional expression of Japanese culture, let alone Japanese wine. Slow down, pop on some noise-cancelling headphones and enjoy this wine's subtle, textural charms.
This White Wine has a faint reddish-orange hue. Sweet and gentle aromas of apricot, apple compote, Darjeeling and old Rose with subtle vanilla notes from the oak ageing.
The Koshu grapes that make up this wine are harvested relatively late so they obtain a pinky-orange hue by the time they are picked.
In the winery, the juice is then left to macerate on the skins for 3 weeks to extract this beautiful colour and extra flavour. Fermentation then takes place, first in stainless steel for about 28 days, then in an oak barrel for about 14 days before a further 8 months in barrel to give the wine that extra softness and flavour.
