Hand-picked grapes are destemmed before fermentation in stainless steel. Cap management is through pumpovers twice daily, warm fermentation helps extraction of both colour and tannin. Maturation occurs in stainless steel for 9 months before bottling.
The new 2016 release has aromas of cherries, blackcurrants and black pepper lead on to the palate which is rounded and smooth and has plenty of fresh fruit on the finish.
The low tannins in this wine make it an ideal accompaniment to duck and lamb dishes as well as richer game dishes. Enjoy this wine at its optimum between now and 2020.
