Domaine Roblin Sancerre Enclos de Maimbray 75cl
The Enclos de Maimbray is a single vineyard on Portlandian clay and Kimmeridgian chalk. High density planting of 7000 vines per hectare and average vine age of 25 years brings wine with great intensity. Yield between 50 and 60 hectolitres per hectare. Light fining and filtration before bottling. Gentle pneumatic press followed by settling before temperature-controlled fermentation in stainless steel at 15-20 degrees for 3 weeks. Kept on fine lees for 6 months with periodic lees stirring to provide body and texture.
This wine is structured with high acidity and notes of blackcurrant and gooseberries with a lean and mineral profile. It is perfect as a chilled aperitif as well as paired with seafood, fish, white meat and goats cheese.
