Grapes are hand-picked in the early hours of the morning to ensure only the best fruit with optimum acidity returns to the winery. After pressing, the must is allowed minimal skin contact to give the wine its delicate pale shade of pink. Fermentation and ageing takes place in stainless steel tanks with a portion of the blend left on the lees for aging to enhance the richness and texture of the wine. Final blending takes place 4 weeks before bottling on site.
Flavours of soft red fruit, white peach and melon sit on a bone-dry backdrop of savoury Provençal herbs. A beautiful rich texture and mouthfeel is balanced with bounteous acidity, imparting a wonderful freshness to the wine which boasts a long lingering finish.
